Chapea is a bean stew: a very popular dish from the countryside of the Dominican Republic. There are variations of this recipe but it generally includes beans and rice, shimmered into a flavourful broth. Along with squash, pepper, onions and cilantro. Now chapea is traditionally made with white rice so its added directly into the soup pot to cook along with the rest of the stew. This makes it truly one pot meal.
