• 1 Medium sweet onion diced
• 1 Rib celery diced
• 4 Cloves garlic minced
• As required Salt and black pepper to taste
• 1.5 cup Long grain rice [such as uncle ben's converted rice
• 5 cup Low sodium chicken stock or water
• 2 teaspoon Cajun or creole seasoning adjust to taste
• 2 Bay leaves
• 0.25 cup Chopped flat leaf parsley or cilantro
