• 1 Large granny smith apple peeled and chopped
• 1 stalk Celery chopped
• 1 Carrot peeled and chopped
• 1 Sweet potato peeled and chopped
• 1 Small yellow onion chopped
• 4 Cloves garlic left whole
• 0.25 cup Extra virgin olive oil
• 1 tablespoon Cumin
• 1 teaspoon Curry powder
• 2 teaspoon Salt plus more to taste
• 0.25 teaspoon Black pepper
• 0.5 teaspoon Red pepper flakes omit if you dont like spice
• 4 cup Vegetable broth
• Cilantro feta, peanuts, toasted baguette, optional for serving
