The ben-tiki sour was created on the spot by mixologist ben sandrof at the request of spirits author frederic yarm, who asked for something like a pisco sour. Like the pisco sour, egg white foam is the star of the show here but sandrof takes it in a rich, tropical direction with rum, cognac, citrus, and the powerful one-two punch of orgeat and cinnamon syrup.
