This basic butter cream icing recipe yields smooth and creamy icing that is suitable to coat any type of cakes, be it a butter cake, fruit cake or sponge cake. The flavor can be varied for chocolate, coffee, mocha, orange or just any other flavour you wish. Use the icing as soon as it is prepared, before it hardens, and use a damp palette knife to spread it, so as to get a smooth finish.
