• 1 Large green zucchini, ends trimmed, halved lengthways, cut crossways into 1cm-thick slices
• 80 gram Haloumi, cut into 1cm cubes
• 190 gram Couscous
• 500 milliliter Boiling water
• 0.25 cup Loosely packed coarsely chopped fresh parsley
• 2 tablespoon Finely Chopped Fresh Mint
• 2 teaspoon Finely grated lemon rind
• pinch Salt
