Ugadi Pachadi, or "ṣaḍruculu," is the most famous dish for the Ugadi celebration. There are six different tastes, including sweet (tipi), sour (pulupu), salty (uppu), spicy (karam), bitter (cedu), and pungent (vagaru) (astringent). Tartness is provided by tamarind paste, bitterness by neem blossoms, sweetness by jaggery, saltiness by salt, spiciness by green chilli, and astringency by raw mango.
Ugadi's sour rice dish features chintapandu, the Tamil word for tamarind. This aromatic and healthy Andhra dish is medley seasonings served over soft, fragrant rice. This rice-based treat is just what you need to round out your elaborate festive thali.
Simple and delicious, Mudda Pappu is nothing more than cooked toor dal. Yet, the quality depends much on preparation and presentation. The yellow lentil needs to be dry-roasted before it can be boiled. The dal used in mudda pappu has not been overdone, so it retains part of its natural texture.
