Ingredients

  • 300 gms red lentils
  • 700 ml Water
  • 200 gms baby spinach leaves (roughly chopped)
  • 1 tsp ginger
  • 1 tsp turmeric
  • 1 tsp cumin seeds
  • Salt to taste

Tadka

  • ½ small onion, finely sliced
  • 4 cloves garlic, finely sliced
  • 2 green chillies, chopped
  • 1 tablespoon Ghee or oil

Method

  • Wash the lentils a few times until the water runs clear.
  • Add the dal, water, spinach, ginger, turmeric, cumin and salt to a large microwavable bowl.
  • Cover and microwave at medium heat for 15 minutes.
  • Meanwhile make the tadka by melting ghee in a pan and adding the sliced onions. 
  • Cook till slightly browned and then add garlic and chill and fry till lightly browned.
  • Pour over the cooked dal and serve with white rice.
