On October 14, 2022, people worldwide will commemorate World Egg Day to raise awareness of the various advantages eggs have for people's health and way of life. The theme for this year is "Eggs for a better life." It draws attention to the ability of eggs to enhance dietary and environmental outcomes. This annual celebration occurs on the second Friday of October. The festivities have expanded and changed since its debut in 1996. In India, the Silver Revolution surged egg production dramatically. Medical research and a more protein-rich hen diet made it possible. It happened between 1969 and 1978. Late Dr BV Rao, the founder of Venkys, was the mastermind behind this poultry business revolution. 

Nevertheless, it goes without saying that Indian cuisine is enriched with countless egg recipes. While a few are famous and staple in the eggetarian and non-vegetarian population's daily diet, a few exotic culinary fares remain less talked about. 

Nargisi Kofta

North India, especially Uttar Pradesh, is known for this dish. It draws inspiration from Mughlai cuisine. Hardboiled eggs are wrapped in a ground meat mixture to form the ideal kofta. Then these koftas go into a rich, spicy, saucy stew cooked with onions, tomato puree, and dried fruit paste and simmered to get the perfect taste. Spices are used to flavour the ground meat.
