On a day meant to celebrate the goodness of burgers, here are three recipes from The Westin Goa and Pune, which are easy to assemble, flavourful and surely drool-worthy. So, what are you waiting for? Chicken Burger Recipe By Chef Ho Chi Ming, Chef De Cuisine, The Westin Pune
Preparation Time: 40 mins
Cooking Time: 20 mins
Ingredients
- 250 gms ground chicken
- 1/3 cup breadcrumbs, dry
- 1/3 cup milk
- 1/4 cup onions, chopped
- 1 tsp Worcestershire sauce
- 1/4 tsp salt
- 1/4 tsp pepper
- For assembling the burger:
- 1 tomato, sliced
- 1 cucumber, sliced
- 1 green onion, sliced
- 1 lettuce
- 150 gms mayonnaise
- 4 cheese slices
- 4 crisp bacon slices
- 2 burger buns
Method:
- Combine chicken, bread crumbs, milk, chopped onions, Worcestershire sauce, salt, pepper and form it into patties.
- Barbeque the patty for 10 minutes per side or until the meat thermometer registers 80°C. If griller is not available, each side of the patty can be fried or seared on a pan for 10 minutes or until the patty is cooked thoroughly.
- Assemble the patty on a burger bun garnished with sliced tomato, cucumber, green onion, lettuce, bacon, cheese and mayonnaise.
- Serve with Onion Rings, Potato Wedges or French Fries.
The Frenchy burger recipe by Ravish Mishra, Executive Chef, The Westin Goa
A delicious American style burger with French onion burger bun
INGREDIENTS (for 2 portions)
- French onion burger bun (120 gms each) 2 nos.
- Buffalo chicken wings (B/L) 350 grams
- Gorgonzola crumble 50 gms
- White onion jam 100 Gms
- A1 sauce 50 ml
- Golden potato 5 Ea
- R. Flour 50 gms
- Hot sauce 50 ml
- Butter 50 gms
- Crushed Peppercorn 10 gms
- Mesclun 50 gms
- Roma tomatoes 4 Ea
- Salt to taste
- Pommery mustard 50 gms
- Paprika 20 gms
- Cayenne pepper 10 gms
Procedure:
- Take Buffalo chicken wings boneless to marinate with salt, crushes pepper, refined flour. Paprika, cayenne pepper and garlic powder.
- Crispy fry coated wings in hot oil for 10-15 minutes, until part of the wings begin to turn brown.
- Toss crispy fried wings in hot sauce and keep aside
- Take French onion burger buns cut into two horizontally, apply soft butter and toast on the griddle.
- Apply A1 sauce on toasted buns and place mesclun and Roma tomato slice
- Place crisply fried and hot sauce tossed buffalo chicken wings and add crumble of gorgonzola cheese.
- Serve this with Fries skin on.
