It’s world baking day today. It’s no secret that baking is an art and people have been baking for centuries and world’s oldest oven is over 6,500 years old! The whole art of bread baking dates way back to 600 BC in Ancient Greece. It’s said that the Egyptians were the first to use yeast in baking bread. While the word “cake” dates back to the 13th century. The earliest cakes were more bread-like. Sugar or honey was added for sweetness.

And it was only in 2012 that Word baking day got coined. Let’s explore two very interesting reicpes by none other than Ruchira Hoon and Shivesh Bhatia

Ruchira Hoon bakes this Date Cake on World Baking Day and she takes to Instagram and shares “I’ve been baking for over 30 years now. Sounds like a long time no? But I’ve loved it so much always and I never want to stop.

There’s just something about flour and sugar and butter coming together like magic to create some insanely delicious baked goods. And even though an old school chocolate cake will always be one of my most favourite things to make and eat - I do love this date cake so much too. Light, springy so so delicious - this cake checks all the boxes for me as a tea cake.

So this #worldbakingday I share a recipe close to my heart - this wonderful wonderful date cake”

Recipe- 

180 grams dates - pitted and chopped

220 grams flour

1/2 tsp baking soda

1/2 tsp baking powder

70 grams brown sugar

A pinch of salt

100 grams melted butter

1 tsp vanilla extract

2 eggs

1/2 cup milk

1 tsp vinegar

Walnuts if you’d like

Method

1. Soak the dates in boiling water for 1 hour.

2. Grind it to a coarse purée and keep aside.

3. Mix together milk and vinegar until split.

4. Add eggs, vanilla, butter, sugar and date purée to it and mix well.

5. Add the flour, baking powder, baking soda and salt and mix well. You can add walnut or more dates as a mix in.

6. Pour into a prepared tin. Bake in a preheated oven for 35 minutes at 180 degree centigrade.

7. Cool and turn over. Drizzle with date syrup before serving.
