Come winter, many people fret at the sight of green, leafy vegetables that are available and cooked in abundance in many Indian households. While palak, methi, or sarson ka saag may not be your first choice, we bet you won't mind if it's added to an upma, pulao, paratha, or dosa. Other vegetables, such as carrots, radishes, and peas, can also easily fit into your breakfast. From carrot dosa to cabbage upma, here are a few yummy breakfast recipes that you shouldn’t miss this season.

1.   Cabbage Upma 

Upma is a delicious South Indian breakfast recipe made with rava or semolina. A variety of vegetables are added in its preparation, and cabbage is the best addition for this dish during the winter. Finely chopped cabbage and freshly peeled green peas are added. This is served hot right away.

2.   Carrot Dosa 

Another popular South Indian breakfast dish, dosa is a type of Indian crepe made with rice flour batter. To make things healthier and tastier, you can always add finely chopped carrots to the batter. Pour the batter into the pan, spread it evenly, and cook it on both sides until crispy. Serve it with coconut chutney and sambhar.

3.   Palak Paratha 

This classic North Indian flatbread, without which breakfast is often incomplete in many Indian households, is the paratha. The good part about it is that it can be flavoured with anything and everything. Blanch the palak leaves, chop them, and mix them with the wheat flour to make a dough. Knead it well and roll it out into a round shape. Toss on a tawa and top with a dollop of butter.

4.   Spiced Shalgam 

This hearty and filling sabzi can work well for both breakfast and brunch. The cleaned and diced turnips, aka shalgam, are tossed in a tomato-based masala that is spiced up with green chillies. This masala-rich, delicious dish is best paired with flatbreads like chapati or a plain paratha to enjoy it to the core.

5.   Mooli Thepla 

Thepla is a Gujarati-style flatbread that is made with a combination of wheat flour and gram flour. Thepla can be flavoured with winter vegetables such as methi, mooli, or radish. The dough is seasoned with coriander powder and red chilli powder and rolled into round shapes to be tossed on a tawa. It is usually paired with a wide variety of pickles.
