Veg Biryani

Well, for one, the biryani is a purely vegetarian treat loaded with rice, lentils and a plethora of vegetables. The Ulavacharu biryani originates from the Vijaywada region of Andhra Pradesh and the specialty lies in the use of horsegram dal. Some refer to it as Kulthi ki dal and it is a nutritious source of protein. The rice and vegetables are cooked in a thick horsegram lentil soup which lends the distinct flavour to the dish.

The Ulavacharu soup i.e. horsegram soup is rich in dietary fibre and several antioxidants which makes it a perfect winter treat. Flavoured with tamarind, coriander and other ingredients, it is believed that this lentil is the star of the vegetarian biryani from Andhra Pradesh. The crop is also largely grown in the southern states as well as Odisha. If you were wondering how to make your biryani healthy, it seems like Dulquer’s favourite biryani could be your solution.

Here’s a quick recipe of how you can make horsegram soup at home.
