Indian cooking was different when we used traditional tools. Though we have moved ahead and started using the quicker alternatives, the significance of traditional kitchen tools could never be forgotten. One such tool that is hardly found in Indian kitchens these days is the Silbatta.  

Silbatta is the OG chutney maker of India and the flavour it gives to chutney is unmatched. For those who don’t know, sil is a flat stone slab whereas batta is a cylindrical shaped tool that does the work of grinding. Not only chutneys but this traditional tool was extensively used in grinding so many ingredients. If you have had a chutney made on silbatta even once, you know how special it is. 

Recently, Chef Kunal Kapur took to Instagram and shared the recipe of ‘Gaon Ki Chutney’. He wrote “recipe alert! Silbatte wali 'Gaon ki Chutney' to make your meal and day more spicyy! Do try it!'. Do you know what’s unique in this chutney? It was made using Silbatta. It has basic ingredients like whole red chilies, garlic, and hing but tastes delicious. If you have silbatta at home, take it out from the shelf and prep it for making this amazing chutney, and for those who don’t have it at home, make this chutney in the grinder to have the feel. Cooking time - 10 mins 

Ingredients 

  • ½ cup mustard oil 
  • 45 gm red chili dried 
  • ½ tsp hing 
  • ½ cup garlic (peeled) 
  • 2-inch ginger (chopped) 
  • 2 tbsp aamchur 
  • 1 tbsp cumin 
  • 2 tbsp coriander seeds 
  • 1 ½ tbsp salt 

Method 

  • Heat a pan and add mustard oil.  
  • Add dried red chilies and sauté well. 
  • Saute until the chili gets a little crunchy. 
  • Drain them out and keep the oil. 
  • Heat the same oil and add hing. 
  • Add cumin and coriander seeds. Add garlic cloves and mix well. 
  • Cook it for a minute and turn off the flame when the garlic turns a little brown. 
  • Take out the garlic in a bowl and add aamchur and salt. 
  • Transfer the mixture to a grinder jar and grind. 
  • When done, store it in a jar and enjoy whenever you want!
