Potato is a versatile ingredient that is found in every Indian kitchen. There are innumerable dishes that can be whipped up with this single tuber. It can be incorporated into curries, sabzis or even turned into detectable snacks that everybody loves to munch on. Since the monsoon season has blessed us with amazing weather, we should fully enjoy it by rustling up some lip-smacking dishes with the humble potato. Bombay style spiced potato AKA Bombay aloo seems just about right for the weather. This snack is an easy-peasy recipe that you can prepare in a couple of minutes and spice up your evenings. Bombay aloo is an Indian side dish which is made using par boiled potatoes that is tossed in toothsome masala curry peppered with spices like black mustard seeds, black pepper, garam masala and many more. The spices involved in the dish makes it a perfect snack to enjoy it with a piping hot cup of masala chai. Here’s the recipe for the Bombay styled potato.

Ingredients:

  • 5-6 medium sized boiled potatoes
  • 1 inch ginger, grated
  • 3 large garlic cloves
  • 4 tomatoes, chopped
  • 1 onion, finely chopped
  • 3 nos. green chillies, finely chopped
  • 1 tsp black mustard seeds
  • 1 ½ tsp coriander powder
  • ¼ tsp turmeric powder
  • 2 tsp cumin seeds
  • 2 ½ tsp garam masala
  • 1 tsp black pepper
  • Salt to taste
  • Handful of fresh coriander leaves, finely chopped
  • 3 tbsp mustard oil

1. In a blender add ginger, garlic and tomatoes. Blitz it until the paste is smooth. Keep it aside.

2. Halve the boiled potatoes and keep it aside as well.

3. Heat oil in a skillet over medium flame. Then add onions and a large pinch of salt. Sauté them until onions are translucent.

4. Add the green chillies, mustard seeds, coriander powder, turmeric powder, cumin seeds, garam masala and black pepper to the pan. Fry them together for at least 2-3 minutes to remove the scent of rawness from the spices.

5. Tip in the prepared tomato mixture and bring it to a gentle simmer.

6. Then carefully add the potatoes and sauté it well with other ingredients. You can adjust the seasonings at this stage.

7. Let them cook for 5-6 minutes. Then turn off the flame and cover the lid for a few seconds.

8. Lastly, garnish it with coriander leaves.

Your delicious Bombay aloo is ready to be gorged upon.
