Now that we know celery is such a beneficial item in our kitchen pantry, how can we not make our dinner soup with it? Here’s a recipe for celery soup that is healthy and low-fat.

Ingredients:

    1 bunch chopped celery  

    1 bunch chopped parsley  

    3-4 chopped onions  

    2 cups chicken broth  

    2 cups non-fat milk  

    Ground pepper  

    Salt, to taste  

    1 cup potato flakes  

Method:  

    Begin by sautéing celery with onions in oil in a non-stick pan.  

    Once this is done, add garlic-flavoured salt, celery seeds and chicken broth to it.  

    Add some ground pepper for additional flavour. 

    Next, blend the celery mixture to form a puree.  

    Meanwhile, stir potato flakes in a jar of non-fat milk and keep aside till they combine.  

    Throw in the celery puree in a saucepan and add the potato flakes with milk mix to it.  

    Mix everything together and bring to a boil.  

    Let it simmer for some time and your celery soup is ready.
