In North India, these pancakes are known as chilla, and in South India, as pudla. Depending on the local communities, each state and region has its own recipe for producing chillas. The chilla's ingredients can also change based on taste preferences and dietary requirements. Besan is often the main ingredient in chilla, although modern consumers add other additives to improve flavour and nutritional value.

Moong Dal Chilla

Rice Chila

A straightforward and speedy morning recipe is rice chilla. In South India, this chilli is more well-known. Rice or rice flour can be used to make this recipe. Its texture is a lovely, crisp white. When you add some veggies to it, it begins to taste somewhat like uttapam. The coconut chutney goes amazingly with the chilla.

Here are some ways to amp up chilla stuffing-

Paneer

Paneer is the best way to amp up a usual chilla. All you have to do is crumble some paneer and mix it with spices and chopped onions. After the chilla is made, place the stuffing inside it. Fold it in a way you are making a burrito. Serve it with some chutney and sauce.

Carrots and capsicum

In the chilla batter, add some chopped carrots and capsicum. After that spread the batter on a tawa and cook for 4-5 minutes. Keep turning the sides and cook until brown. This chilla tastes just like uttapam. It is quite healthy and nutritious. Try it with some coconut chutney.

Onions, tomatoes and cucumber

This stuffing tastes just like fresh tacos. Chop some onions, tomatoes and cucumbers. After that sprinkle some black pepper, salt, cumin powder and lemon juice. You can also add some mayo and ketchup to the stuffing.  Place the stuffing on the chilla and serve hot.
