After a long day’s work and meetings that would just never end, you barely get any time to think of lavish dinner, let alone cooking it from scratch. Cooking dinner can be even more difficult if you are left searching for ingredients at the last moment after you have turned the stove on. This is why, it is never a bad idea to opt for something simple, quick, classic and fuss-free. Something like a pasta, maybe?

Pasta is an Italian dish in which pasta, different-shaped shells and noodles made of flour, is tossed with sauce, a host of veggies and/ or meat. The sauces too can vary in terms of colour, flavour and consistency. Some of the sauces can also be spiked with alcohol, for a richer taste. But we understand your time crunch, so we wouldn’t ask you to attempt a complicated sauce like that. A pasta is as simple or as complicated as you make it.

This one-pot recipe by homechef and Slurrp Community member Chirag @tadka_mar_ke, is ideal for a lazy dinner. As the name suggests, you only need one pot to toss in everything and whip up this delish pasta. In this recipe, Chirag has used mixed millet pasta, it gives the pasta a healthier edge, making it ideal for kids and calorie-counters, you can choose the refined varieties too. The pasta used here is penne, again, you can experiment with the kind of pasta you want to choose here. A pro tip: do not pick a variety that is very starchy, else, it will all clump together.

The veggies used here are some garlic cloves, chopped onions, yellow bell peppers. You can add or omit the veggies as pe your choice. Watch the video and learn how incredibly simple this recipe is.

  • One chopped onion
  • 250 grams of pasta of your choice
  • 1 tbsp mixed herbs
  • 1 tbsp chilli flakes
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1.5 tbsp olive oil
  • 1 inch butter cube
  • Dollop of mayonnaise
  • 1.5 tbsp of tomato sauce
  • 3-4 tbsp of diced mozzarella cheese
  • Roughly chopped celery with stalk
  • 750ml of water

Method:

  1. Put all the ingredients in a pan.
  2. Cover the lid of the pan.
  3. Let it cook for 12-15 minutes or till it done.

Garnish

Garnish it with chilli flakes and fresh celery leaves.

Pro-tips

1. You can add or remove the vegetables as per your preference.

2. Don't add too much salt at a first go as Italian seasoning also has a salt.

3. Instead of Italian seasoning or mixed herbs you can simply use oregano.

4. Don't add too much of water, otherwise pasta will get overcooked.
