The search for an appetiser that’ll knock everyone’s socks off at your dinner party can be exhausting. There are so many options to choose from - one more appetising than the other. While there are many appetisers you can make using chicken, there’s nothing that spells elegance more than cooking mutton. Whether it’s a galauti kebab or a simple mutton chaap, mutton is truly the most delicious and versatile meat while making the perfect appetiser. While selecting a dish to try out, you must go with one that’s easy to make, uses fewer ingredients and is packed with flavours. Interestingly, the Kolkata Style Mutton Chap ticks all of these boxes. Made with quite a few ingredients and no hassle of lengthy preparations, this crunchy on the outside and juicy on the inside chaap is sure to leave you wanting for more. Here’s a recipe for the same, by Home Chef Sonia Sarpal: 

Ingredients: 

Mutton - 1500 g 

Curd - 1 cup 

Papaya paste - 1/2 raw 

Poppy seed paste - 2 tbsp 

Cashew paste - 1 tbsp 

Dried red chilli paste - 2 tbsp 

Ginger-garlic paste - 3 tbsp 

Garam masala - 1 tsp 

Turmeric powder - 1 tsp 

Salt to taste

Oil/ghee - 10 tbsp 

Lemon juice for garnishing

Method: 

In a bowl pour some curd, raw papaya paste, poppy seeds paste, cashew paste and dried red chilli paste and mix well. 

In the same bowl, add some ginger garlic paste, garam masala, salt and turmeric powder and combine well. 

Add the mutton pieces to the marinade. Coat well and marinate for five hours. 

In a pan, heat some oil. Arrange the mutton chops across the pan. Cover and cook for 1 hour on low fame. Cook until golden brown. 

Serve the Kolkata Style Mutton Chap hot with garlic naan ,spicy mint chutney and onions.
