Gujaratis have had a strong foothold in India’s pop culture. We have learned a great deal about the community, their culture and food from countless hit TV shows and Bollywood Movies. Take ‘jalebi-fafda’ for instance, who knew a simple, rather off-beat combination sweet crispy jalebis and fafda (thin Gujarati crackers), would emerge as a beloved breakfast item even beyond Gujarat, thanks to a popular TV character’s obsession with the same? Gujarati cuisine is vast and vivid, but what intrigues us most is their class of snacks. The Farsaan and the Nasto. These are light nibbles that you can munch on through the day, some of these snacks like sev, gathiya et al can even be carried for long journeys. While talking about Gujarati food, how can we possibly not mention the Dhokla?
Dhokla is a spongy, steamed cake made with a besan batter. The fermented snack is often dipped in sugar syrup, and is topped with coriander leaves, mustard seeds and dessicated coconut. Here are the detailed instructions:
Method:
- In a big mixing bowl, add one cup of besan.
- Then add one teaspoon each of grated ginger and fine sugar.
- Next, add a bowl of curd. This would help quick fermentation
- A pinch of salt goes in next.
- Followed by a pinch of turmeric, oil (1 tsp).
- Add water as required and make a thick and smooth batter, make sure there are no lumps.
- Finally, add a teaspoon of fruit salt or Eno.
- Mix gently. Rest the batter. After a few minutes, you will see that the batter and fluffed up a bit.
- Grease two mugs, and pour the batter in the mugs.
- Tap the mugs so that the batter is well-settled.
- Microwave for 2-3 minutes. Your dhokla is ready...but incomplete.
- Now is the time to prepare the tempering.
- In a pan heat a teaspoon of oil, mustard seeds, two sliced green chillies, some curry leaves, a pinch of sugar, water and lemon juice.
- Let it sizzle. Pour the sizzling tadka on top of the dhoklas and chomp away.
