Usually, kids are believed to be fussy eaters. The mention of vegetables and healthy food makes them run away from the dining table and well, throw tantrums. To feed them all the greens and healthy food, mothers usually look for recipes that disguise the vegetable in such a way that the kids don’t doubt it. I remember how my mother used to feed me bhindi (okra) by coating it in besan and frying it. It almost seemed like french fries to me. Similarly, in an interaction with Chef Amrita Raichand, she highlighted that being a mother of a young kid is no easy task. In order to give him all the nutrition in his food, she would make roti wraps, roti pizza and plenty of other fusion dishes.
Apart from kids, it is times like sudden social gatherings wherein you need to find quick snacks to serve. You may not have the frozen foods always stocked up in your fridge and making something elaborate from scratch is time-taking. In such a case, all you can find when you scan the kitchen are vegetables. Looking at those ladyfingers, brinjal and other veggies, does an idea strike you? Well, home chef and Slurrp Community member Sonia Sarpal definitely knows what to do. She shares a brilliant idea of a snack platter, made with brinjal, arbi, green chillies and more.
Brinjals are high in fibre and contain loads of antioxidants while arbi aka taro root, is a root vegetable that is good for keeping blood sugar levels in control. Apart from this, it also boosts immunity and aids weight loss since it improves the digestive system really well. This platter provides a great balance of nutrition and taste by combining all the vegetables.

Brinjal Kachari And Crispy Arbi Platter
Ingredients
- 1 medium size brinjal
- 1 cup wheat flour
- Oil for frying
- Salt to taste
- Water for the batter
- 1 tsp red chilli powder
- 1 tsp Chaat masala
- 1 tsp taco powder
- Boiled arbi
- Chillies stuffed with chaat masala
Method
- Start by slicing brinjal into circular shape.
- Make a batter of wheat flour, ginger-garlic, salt and water. Combine it well.
- Now, sprinkle some salt and red chilli on the brinjal slices. Heat oil in a pan.
- Dip the slices into the batter and fry them in hot oil.
- Once done, take it out and keep aside.
- Boil arbi and peel it well. Flatten it with your palm and fry it too in the same oil.
- Slit the green chillies and coat them with the batter prepared earlier.
- Fry these chillies too.
- Arrange all the fried items on a large plate and sprinkle chaat masala.
- Add a dash of salt and some red chilli powder.
- Toss it all together and garnish with coriander leaves.
- A delicious vegetable platter is ready. Place some lemon wedges on the side and enjoy.
