Eggs are a staple food all over the world. Enjoyed in a variety of forms, it is mostly eaten as breakfast. Among the various cooking methods, one that stands out for its elegance and delicate texture is poaching, where eggs or any other ingredient are cooked by being submerged in liquid, preferably water. We might all be familiar with poached eggs on toast, where the eggs are white as snow on the outside with a runny yolk on the inside. The desi-style eggs poached are soft from the inside and a little crunchy from the outside, with a filling of spices and veggies like onions, green chillies, and tomatoes.

It is not submerged in water and cooked delicately, but it is definitely fried delicately with oil and called eggs poach. It is a popular street food in the Indian state of Bihar. In this video, you can see the vendor preparing eggs poach in a special seven-cavity cookware similar to an appam maker.

He starts by adding chopped onions, chillies, and ginger to the hot oil, followed by salt, turmeric, and masala mix. The vendor lets it cook for a moment, then adds fourteen eggs in pairs of two to all seven cavities. To make the dish tastier, he adds a little more onion, chillies, masala, and salt, along with coriander leaves. The eggs are cooked well on both sides for a few minutes until slightly brown and then served hot to the customers. The price of a double-egg poach is Rs 40 per plate.

His shop is near Durga Mandir in Gardanibagh, Patna, and both chicken and duck poached eggs are available here. The vendor has been serving desi-style egg poach for more than thirty years and still uses the traditional method for cooking, i.e., coal and cow dung cookstoves. The video was uploaded by the account @indianfoodvlogs on YouTube and has gotten more than 4.2 lakh views. People in the comment section love his recipe and are eager to try it.
