Nutrients Present in Bell Peppers

A raw red bell pepper contains 94% water, 5% carbohydrates, 1% protein and almost zero amount of fat and hence acts as a good weight loss food. A red bell pepper contains twice the Vitamin C and eight times the Vitamin A as green capsicum. Bell Peppers are a rich source of Vitamin C, thus helping in immunity building. They have good amounts of Vitamin A, B6, Vitamin E and other necessary nutrients such as folate, riboflavin, etc. They are used as salads or as pizza toppings. 

Ingredients:

  • 2 tbsp Butter 
  • 1 Carrot chopped
  • 100 grams French Beans chopped
  • 3 Baby Corn  chopped
  • 1 Green Capsicum chopped
  • 1 Red Capsicum chopped
  • 1 Yellow Capsicum chopped
  • 1 tbsp Butter (For Paneer)
  • 150 grams Paneer chopped
  • 2 tbsp Oil
  • ½ tsp Cumin Seeds
  • 1 tsp Ginger grated
  • 1 tsp Green Chilli finely chopped
  • 2 Tomato chopped
  • 1 tsp Salt 
  • ¼ tsp Turmeric Powder
  • 1 tsp Coriander Powder
  • 1.5 tsp Dry Fenugreek
  • 1.5 tsp Kashmiri Red Chilli
  • 2 tbsp Tomato Sauce
  • ¼ tsp Garam Masala
  • ¼ tsp Crushed Black Pepper 
  • Coriander Leaves

Method Of Preparation:

  1. Melt butter in a pan and add carrots, saute for half a minute; then add beans and baby corn, again saute for a minute
  2. Now add bell pepper red and yellow and capsicum, saute for around two minutes and take the out in a plate
  3. Again add butter in the pan and let it melt, now toss paneer in the same pan
  4. Take the paneer out once turned slightly brown
  5. Now heat oil in a pan and add cumin seeds, add ginger and green chillies; let them all crackle
  6. Now add chopped tomatoes (remove seeds) and cook till turned soft and mushy 
  7. Add salt, turmeric powder, coriander powder, fenugreek leaves, add let the masala cook for a minute
  8. Add kashmiri red chilli powder and mix well
  9. Now add tomato ketchup and garam masala, cook for half a minute
  10. Add 2-3 tablespoons of water, let it come to a boil and then add roasted vegetables and paneer
  11. Sprinkle black pepper powder, mix well and cover the pan; cook it on low flame for 2-3 minutes
  12. Open the pan and stir it again
  13. Garnish it with coriander leaves and serve hot

This bowl of Veg Jalfrezi is a great option for dinner as it contains all the nutritions and tastes heavenly.
