In Spain and England, this became popular when the working class was in need of fast, portable and inexpensive food. In the US, sandwiches became widespread as bread became a staple in the 20th century. Further, it also spread to the Mediterranean.

Method of Preparation

A simple way to place grilled vegetables and condiments between two bread slices is what comprises in making a veg grilled sandwich. Grilling of sandwich will give a better crunch while eating and addition of cheese, spices and pesto sauce complements the added vegetables and enhances overall flavour.

Ingredients

  • 4 teaspoon extra virgin olive oil
  • 1/8 teaspoon black pepper powder
  • 1/8 teaspoon mixed dried herbs
  • 1/8 teaspoon garlic powder
  • ¼ teaspoon chilli flakes
  • 2 teaspoon lemon juice
  • Salt as per taste
  • Tomatoes (without seeds and sliced)
  • Green, yellow zucchini (sliced)
  • 4-5 mushrooms (sliced)
  • Sour Dough Bread
  • Butter
  • Pesto sauce
  • Mustard leaves
  • Processed cheese
  • Gouda cheese

Steps to Prepare Sandwich

  • Take tomatoes, zucchini, and mushrooms in a bowl
  • Toss them thoroughly
  • Place the zucchini on a heated grill pan one by one
  • Cook these vegetables for about two minutes and then flip it till there are grill marks appear on either side
  • Do the same for tomatoes and mushrooms one by one
  • Take the bread piece, spread some butter over it
  • Now, spread some pesto sauce over the butter
  • Start layering with vegetables: first tomatoes, then zucchini and then mushrooms
  • Add some micro greens: lettuce/ mustard/ rocket leaves 
  • Sprinkle as much cheese as you want: Gouda and Processed cheese
  • Cover with the other slice of bread
  • The sandwich is ready for a quick bite
