Incidentally, Kathi kabab rolls first originated in Kolkata, invented by Nizam’s Kathi kabab rolls. Kathi is wrapped by the all-purpose wheat roti, stuffed with many spices, smoky chicken skewer-roasted kebab, sliced onions, chutneys, green chillies, and veggies. Now, Back in the 1940s, the Nizam's started a new dish called kebabs Kathi rolls. They rolled up the kebabs in a fried paratha and sold them. You get numerous varieties in rolls today, such as double chicken rolls, egg rolls, mayonnaise rolls, cheese rolls, and noodle rolls. So are you ready to unroll the recipe of chicken Kathi roll in your kitchen?

Ingredients You Need:

For filling:

  • ½ kg Chicken (boneless and minced)
  • 2 tbsp oil 
  • 2 onions (finely chopped)
  • 2 ginger piece (finely chopped)
  • 4-5 green chilli (finely chopped) 
  • 2 tbsp garlic (crushed) 
  • Salt to taste 
  • ¼ tsp turmeric powder 
  • ½ tsp garam masala powder 
  • 1 tsp coriander powder 
  • ½ tsp red chilli powder 
  • 2 tbsp gram flour 
  • Coriander (chopped) 
  • Marinate for ½ to 1 hour and keep it covered in the refrigerator. 

For dough:

  • 1 cup wheat flour 
  • ½ cup all-purpose flour 
  • 1 tsp salt 
  • 1 tbsp vegetable oil 
  • 1 whole egg 
  • Warm for kneading the dough 

For garnishing :

  • Onions (sliced)
  • Green chillis (finely chopped)
  • Lemon juice 
  • Green mint chutney 
  • Cream (if need)

Steps to follow

For kneading a dough:

  • Combine all the dry ingredients and dry mix them with your hands. 
  • Make a healthy type in the centre and break the egg and oil. Mix all the ingredients roughly.
  • Now add warm water step by step. And knead the dough. 
  • When it's done, apply a little oil to the dough and cover it with wet muslin/ cheesecloth. And keep it aside for 15-20 mins. 
  • Cook on a flat pan from both sides. Flip it and cook the roti till its colour changes and bubbles start to appear. 
  • It's done. Keep it aside and make Kathi kababs stuffing.

Time to cook the marinated chicken:

  • Take the marinated chicken minced.
  • Mix all the ingredients by hand again. Now roll it like in the shape of kababs. 
  • Heat the pan with less vegetable oil and shallow fry all the hand-made kebabs. Once all is done.

Time to assemble the kebab in paratha: Take a cooked paratha, assemble chicken kebab in the centre, and garnish sliced onions, green chillies, sauces, green chutney, chopped coriander leaves, cream, and squeeze lemon juice. And tightly roll it.
