You've probably heard about the Turkish Milk cakes from Hafiz Mustafa, a well-known Turkish bakery. 

The cake's straightforward flavour and texture used to blow our minds. When you want a unique treat, try making these Turkish milk cakes (Trileçe), which are delicious and simple to make. After being soaked in a delectable milk concoction, soft sponge cake is topped with whipped cream and caramel. You can easily alter and create your own flavour for the pistachio one that we're also making.

The delicacy known as "trilece," which is a sponge cake immersed in a creamy milk bath, has overtaken Istanbul's dessert scene in recent years like a tsunami that strikes suddenly. The dessert seemed to be available everywhere, from posh uptown patisseries to modest old city kofte shops. Trilece, as its name suggests, is related to the well-known tres leches cake from Latin America. It is quite mysterious how a cake with South American origins made its way via the Balkans and into the pastry shops of Istanbul since the one that has taken over Istanbul is from the Balkans.

Ingredients: 

Vanilla Sponge Cake 

    4 eggs divided into whites and yolks 

    120g all purpose flour 

    100g milk 

    100g granulated sugar/caster sugar 

    1 tsp baking powder 

    1 tsp vanilla paste/essence 

    1/4 tsp salt 

    1/4 tsp cream of tartar 

Milk Soak: 

    260g whole milk 

    200g heavy cream 

    30g sugar 

Caramel Topping: 

    170g heavy cream 

    100g sugar 

    20g butter 

Whipped Cream:

    350g heavy cream 

    30g sugar 

Pistachio Cake: 

Same as vanilla cake, except you will use: 

    60g all purpose flour instead of 120g 

    60g ground pistachios 

    Green gel food coloring 

Pistachio Soak: 

    Milk soak with additional 

    75g pure pistachio paste

Method:

Caramel Trilece

1.    Combine the ingredients to make the milk soak.

2.    Poke holes all over the top of the cake with a skewer or other pointed object. 

3.    Poke holes all over the top of the cake with a skewer or other pointed object. 

4.    While the meat is resting, prepare a caramel by melting the sugar in a small pot over low heat. 

5.    Once the sugar has started to melt, mix in the remaining sugar, and once it begins to boil, add the butter.

6.    Stir in the cream after the butter has melted and been combined, then turn off the heat.

7.    Remove it into a bowl and let the caramel cool. 

8.    To make whipped cream, whisk the ingredients together until stiff peaks form (do not overmix)

9.    Evenly cover the dish with the whipped cream 10- pour the caramel on top and spread it out into a thin layer

10.    Pipe whipped cream lines on top, then add striped decorations with a toothpick.

Pistachio Trilece

1.    Prepare the cake as for the vanilla cake, but add the food colouring to the egg yolks and sift the mixture before adding any leftover pistachio bits. 

2.    Prepare the soak in a blender.

3.    Sprinkle chopped pistachios and whipped cream on top.
