It is one of the easiest sweet dishes prepared quickly with handy ingredients. Paneer kheer (cottage kheer) tastes a lot like ras malai with soft chenna pieces (paneer) soaked in the flavor of milk. You will get the taste of nuts and rose water in each bite. This could be your special festive dessert on Navratri, Janmashtami, Dussehra, or Diwali. Ingredients:
- 3 cups of whole milk
- 1 cup paneer (crumbled)
- ½ cup condensed milk
- 4- 5 sugar (as required)
- 1 tsp green cardamom powder
- 10-12 almonds (chopped)
- 10-12 cashews (chopped)
- 10-12 pistachios (chopped)
- 6-8 raisins
- 7-8 saffron strands (optional)
- 1- ½ tsp rose water/ rose essence (optional)
Instructions to make paneer kheer:
- Take a wide, heavy-bottomed pan and boil milk on a low flame. Add crumbled paneer and cook it for 7-10 minutes.
- Add condensed milk and simmer the kheer till it thickens a bit.
- Now in the kheer, add raisins, sugar, and green cardamom powder.
- Stir and add chopped dry fruits (cashews, almonds, and pistachios). Simmer for 4-6 minutes.
- In the end, add rose water and saffron, stir it and simmer for about 2 minutes.
Your paneer kheer or paneer payasam is ready. Serve it warm or chilled with a few saffron strands, chopped dry nuts, and rose petals. This kheer will also taste good with pooris.
Storage suggestions:
- Keep the paneer kheer in the refrigerator, and it will last for 2 - 3 days. Store in an airtight lidded container.
- Don’t freeze it; by freezing, the milk will cradle once you thaw it at room temperature, and it won't taste good.
