The dessert is packed with chocolate cream and chocolate soil on the base with a chocolaty melba toast on top. The melba toast is a thinly-sliced toast that is dry and crispy. It is named after an Australian opera singer, Dame Nellie Melba. This is dusted off with some cocao powder and you get a delectable dessert on the plate. The Executive Pastry chef at Hilton And Hilton Garden Inn, Bengaluru has shared the recipe of this chocolate heaven and here’s how you can make it. 

Chocolate Cream With Chocolate Soil And Melba Toast

Ingredients: 

    200 gm Callebout 70.5% 

    500 ml heavy cream 

    100 gm egg yolk 

    75 gm castor sugar 

    15 gm gelatin leaves 

    Milk chocolate spray

    100 gm cocoa butter 

    100 gm milk chocolate 

Method: 

1.    Heat milk, cream and sugar

2.    Once the liquid has reached boiling point, temper the whisked egg yolks into the mixture. Then thoroughly cook the egg and cream mixture.

3.    Pour the hot mixture onto the chocolate. Mix until fully melted.

4.    Add the gelatin and mix one last time.

5.    Pour the mixture into round silicone molds and let it sit overnight.

For Spray

Method: 

1.    Melt the cocoa butter and chocolate together. Strain through a fine-mesh or muslin cloth before use.

For Chocolate Soil

Ingredients:

    125 g castor sugar 

    75 g flour 

    125 g almond powder 

    60 g cocoa powder 

    2 gm sea salt 

    63 gm melted butter 

Method: 

1.    Mix all the ingredients together. Bake at 180 degree Celsius for 15 minutes.

For Melba Toast

Method:

1.    This is a type of crisped sweet bread. To prepare, take thin slices of any hard-crusted bread. 

2.    Dip evenly in butter and gently sprinkle with castor sugar. 

3.    Bake until crisp and sugar gets caramelized.

For plating: 

1.    De-mould the cream and with the help of a machine spray gun, spray the roundels with milk chocolate spray. 

2.    Let it set in the freezer for some time. 

3.    On a plate of choice, evenly spread the chocolate soil. 

4.    Place the finished roundels of chocolate cream.

5.    For garnish, place the Melba toast next to the chocolate cream roundels.
