Kaali gajar ka halwa
Black carrots or kaali gajar are only available for a very short time period during the early winters and you need to make use of this window very soon to prepare this amazing halwa. While carrots are mostly sweet, this variety has a subtle peppery taste that actually adds to the flavour of the dish. Let us look at a simple recipe.
Ingredients
- ½ kg black carrot
- 2 cup sugar
- Ghee
- 100 gm mawa
- 2 cups milk
- 10-12 roasted almonds
- 2 tsp cardamom powder
Method
- Grate the black carrots finely.
- In a kadhai, heat up the ghee.
- Add the grated carrots and cook it for 10 minutes.
- When the ghee starts to separate a little, add the milk.
- Cover and cook on medium flame for 20-25 minutes till the carrot is completely cooked.
- Add the sugar and keep stirring the halwa for 5 minutes.
- Add cardamom powder and the mawa.
- Adjust consistency according to your preference.
- Switch off the gas and garnish with roasted almonds.
- Enjoy the halwa hot.
Green gram halwa
