Summer is the season for watermelons. Summer is so much better and manageable due to watermelons in our diet, whether we're biting into the pulpy watermelon flesh or crushing it to make cold and delicious watermelon juice. But, as we delve into the luscious brilliant reddish-pink fruit, do we ever consider how we are wasting a large portion of the fruit by simply throwing it away? All of that watermelon rind that ends up in our garbage is actually incredibly nutritious and healthy, as well as tasty. For goodness sakes, watermelon is high in fiber, which improves weight loss and keeps the digestive tract functioning smoothly. So, let's offer our favorite summer fruit a better fate and put it to good use. You probably didn't realize it, but the watermelon's outer layer isn't useless; it can be eaten as well. Surprised? We were as surprised as you were when we discovered out! Watermelon Rind Chutney This chutney recipe is similar to a jam recipe, but it has a more spicy and acidic flavor. Take 3-4 cups watermelon rind, with green skin removed and sliced or chopped into small pieces, 1 cup sugar, ½ tbsp apple cider vinegar, ½ tsp salt, ½ tsp pepper, and some grated ginger. Combine all of the ingredients in a cooker or a skillet and cook for at least 3-4 hours until everything starts to combine. If you want to make it spicier, you can add red chili powder. After the chutney has come together, you can keep it the same consistency or combine it into a paste. Image credit: Unsplash Watermelon Rind Halwa Another quick and tasty option to keep your watermelon rinds from going to waste. Take 1 cup watermelon juice and 1/2 cup chopped watermelon rind. Grind the rinds into a paste with as little water as possible. Heat a pan, add 2 tbsp ghee and 2 tsp cashew or almond powder. Roast until it turns aromatic. Now add the rind paste you just prepared, combine it well and keep stirring. When the paste starts to leave the ghee, you know it's done. Add the sugar(as per taste) and watermelon juice at this point. It will now begin to thicken. Bring it to a boil, then remove it from the heat and allow the water to soak in thoroughly. It's time to enjoy your rind halwa! Watermelon Rind Dosa This rind dosa recipe is well-known throughout South India and is served on special occasions. You need 1 cup chopped rind Chopped (white part without green part), 1 cup dosa rice, ⅓ cup poha rice, ¼ cup desiccated coconut, Salt as needed, water as needed, Ghee or oil for brushing. Soak dosa rice for 4-5 hours in adequate water. Soak poha in enough water for 30 minutes before grinding the batter. Add chopped watermelon rind and chopped coconut to a blender and make a smooth paste. Add soaked rice and poha in batches with just enough water to make a smooth batter. Transfer the batter in a large mixing basin. Allow for a fermentation period of 8-10 hours or overnight. Add the salt to the batter before making the dosas. Mix thoroughly. It's important that the batter isn't too thick or too thin. Preheat a dosa tawa. Reduce the heat to medium. Pour a ladle of batter in the center and spread the dosa thinly but evenly. Splash oil should all over the place. Cook it on medium heat, covered, until the top is brown and the bottom is cooked. Transfer to a plate. Repeat with the remaining batter. Serve hot with your favorite chutney.
