Here's how you can make this pizza at home:
Ingredients:
•40 g crumbled blue cheese
•160 g washed and dried spinach
•2 large flat sliced mushrooms
•1 tsp rapeseed oil
•4 walnut hunks
•2 chopped garlic cloves
•1 thinly sliced red onion
Base:
•½ tsp baking powder
•3 tbsp yoghurt mixed with 3 tbsp water
•125 g whole wheat flour
Method:
•A baking sheet should be placed inside a hot oven that has been preheated to 200°F or 180°C.
•The mushrooms and garlic should be cooked until soft in hot oil in a sizable nonstick frying pan, turning constantly. A handful at a time, add the spinach and simmer until barely wilted but not soggy.
•After stirring in the onion, remove the pan from the heat.
•To prepare the base, add the yoghurt mixture to the flour and baking powder in a bowl and stir with a cutlery knife to form a soft dough ball.
•Put the dough on a piece of parchment paper dusted with flour and press with floured hands to form a flat 20-cm circle.
•Add the spinach mixture on top, sprinkle the cheese and walnuts on top, and bake the dough for 12 minutes, or until it is golden and cooked through.
