Ingredients: (2 Servings)

    1/2 large onion

    1/4 carrot

    1 and 1/2 tbsp gram flour (besan)

    1/2 tsp coriander powder

    Salt as required

    1/2 tbsp vegetable oil

    1/2 cup quinoa

    1/4 capsicum (green pepper)

    2 tbsp cabbage

    1/2 tsp red chilli powder

    1/2 tsp dry mango powder

    1 tbsp coriander leaves

Method:

1.    Give the quinoa 30 minutes to soak. Now thoroughly wash it, add it to the blender, and blend until thick paste forms. If more water is required, add 1-2 tbsp.

2.    In a bowl, transfer the quinoa paste. Add the finely chopped cabbage, onion, carrot, and coriander leaves. Add besan, salt, red chilli powder, coriander powder, and dried mango powder. Make a thick mixture by giving it a nice mix.

3.    Now pour a tbsp of oil into a nonstick pan and heat it up. The mixture is used to form little tikkis, which are then placed in the pan. Cook until a rich golden brown is achieved on both sides.

4.    Serve the cooked cutlets with the dip of your choice once all of them have been cooked.
