What everyone craves during these peak summer months are hydrating, light meals that are as tasty as they are easy to digest. And that’s just what Chef Bhim B Tamang from Vietnom has to offer you with his curated, summer-special recipes. 

Chef Tamang is an expert in South East Asian cuisine and has an experience of 13 years under his belt. This year, he is adding a number of Vietnamese summer specials to the menu at Vietnom, and each dish is not only true to its roots and perfect for summers, but also packed with flavours every Indian will love. Making use of summer fruits like pomelo and fresh vegetables, Chef Tamang has created two special recipes for Slurrp readers.

Vietnamese Avocado Summer Rolls:

These rice paper rolls are filled with creamy avocado slices, crisp vegetables, and aromatic herbs, creating a delightful combination of textures and flavours. They are perfect for warm summer days or as a light and healthy snack any time of the year. 

Ingredients:

8 rice paper wrappers 

2 ripe avocados, thinly sliced 

1 carrot, julienned 

1 cucumber, julienned 

1 red bell pepper, thinly sliced 

1 cup fresh cilantro leaves 

1 cup fresh mint leaves 

1 cup fresh basil leaves 

Sweet chili sauce or peanut sauce, for dipping 

Instructions:

Prepare all the ingredients by slicing and julienning the vegetables and herbs. 

Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for about 5-10 seconds until it becomes pliable. 

Place the moistened rice paper wrapper onto a clean, damp kitchen towel or a plate. 

Arrange a few slices of avocado in the center of the rice paper wrapper, leaving some space on each side. 

Top the avocado with a small handful of julienned carrots, cucumbers, and red bell pepper. 

Add a few leaves each of cilantro, mint, and basil on top of the vegetables. 

Fold the bottom edge of the rice paper wrapper over the filling, then fold in the sides, and roll tightly to enclose the filling. 

Repeat with the remaining rice paper wrappers and filling ingredients. 

Serve the rolls immediately with sweet chili sauce or peanut sauce. 

Vegetable Pomelo Salad

It features juicy pomelo segments tossed with fresh herbs, crunchy vegetables, and a tangy dressing, creating a harmonious balance of sweet, sour, and savory soy notes. This refreshing salad is a popular choice for its refreshing taste and nutritional benefits. 

Ingredients:

1 large pomelo, peeled and segmented 

1 ripe avocado, sliced 

1 small red onion, thinly sliced 

½ cup fresh herbs (such as cilantro, mint, and basil) 

¼ cup roasted peanuts, chopped 

1 cup of soy chilli dressing  

Instructions:

In a large mixing bowl, combine the pomelo segments, avocado slices, sliced red onion, chopped fresh herbs, and roasted peanuts. 

Pour the dressing over the salad ingredients in the large mixing bowl. 

Gently toss the salad until everything is evenly coated with the dressing. 

Serve the Vietnamese Pomelo and Avocado Salad immediately as a refreshing appetizer or side dish.
