Avocado open sandwich consists of a slice or two of bread, which is toasted with one or more food items. There are several variations to the traditional avocado toast, including avocado on sweet potato toast, avocado and vegemite toast, French toast with avocado and Parmesan cheese, Toast fingers with soft-boiled eggs, avocado and baked beans on toast, and avocado and feta smash on toasted rye. Another common variation is Avocado Open Sandwich with smashed avocados, soft-boiled eggs, chili oil, and other toppings, often including hot sauce.

 The origins of avocado toast can take you all over the globe and back hundreds of years. Bill Granger from Sydney Australia claims that he was the first to invent and serve it at his cafe Bills, in 1993. Bill's was modeled after restaurants in the more eclectic Melbourne food scene.

Ingredients for sandwich

  • ½  Avocado (ripe)
  • 2 slices - Bread (or Garlic Bread)
  • 2 - Mushrooms (finely sliced)
  • ½ - Tomato (finely sliced)
  • 1 - Egg (soft boiled or fried depending on your taste)
  • 1 - Spring Onion
  • 1 tsp - Soy Sauce
  • ½  tsp - Sesame Seeds
  • ½  tbsp - Butter

Ingredients for chili oil

  • ½ cup – Any Neutral Oil
  • 2-3 tbsp - Red Chilli Flakes (crushed)
  • 5-6 - Garlic Cloves
  • ¼ tsp - Salt

Method of chilli garlic oil

  • Finely chop 5-6 cloves of garlic (you could add more or less depending on your taste)
  • In a pan, add neutral oil (neutral oil is one which does not have a pungent strong smell of its own – for instance coconut or groundnut or mustard oils have strong smells) 
  • Add chopped garlic and gently fry the garlic until it just starts to change color
  • If the oil is sizzling, let it sit for 30 seconds 
  • When it stops sizzling, pour the hot oil into a heat-safe jar, add chilli flakes and salt
  • Set aside 

Method of avocado open sandwich

  • In a pan, add butter
  • Add tomato slices and mushrooms 
  • Saute for about 1-2 minutes, set aside
  • In a pan, boil an egg for about 3-7 minutes till its yolk is semi-soft (alternatively, if you like the egg fried, fry an egg until the edges turn crispy (about 2 minutes). Slice the boiled egg in equal parts 
  • In the same pan, add some more butter and the slices of bread 
  • Toast the slices of bread until they turn light golden on both sides
  • In a bowl, add half an avocado, smash it using a smooth spatula and keep mixing till it becomes a paste
  • Spread the avocado paste over the bread slices
  • Heat a pan on a medium-high flame, pour in the prepared chili oil, add sauteed tomatoes and mushrooms, add a splash of soy sauce (use light soy sauce) and mix well. 
  • Take the slices with the avocado paste and place in the pan with paste side up
  • Take the tomato-mushroom mix, spread over the avocado paste, and top it off with the sliced boiled egg. 
  • Turn off the heat once the bread has turned crispy or golden brown. 
  • Your Avocado Open Sandwich is ready to be relished. 

The word ‘toast’ comes from the Latin torrere ‘to burn’. One of the first references to toast in print is in a recipe for Oyle Soppys (flavored onions stewed in a gallon of stale beer and a pint of oil) from 1430!
