A sandwich typically consists of vegetables, sliced cheese or meat, placed on or between slices of bread. The variants across the world include Reuben Sandwich of North America, Croque Monsieur of France, Shawarma, a Levantine dish made with lamb pieces and a Finnish sandwich, Porilainen. The Indian versions include Indori Masala Sandwich, Dahi Sandwich, Paneer Tikka Sandwich, Chutney Cheese Sandwich, Bombay Veg Sandwich and Cream Cheese Sandwich. Paneer Makai Sandwich filled with protein and fat-rich paneer and corn and vitamin and folate-rich spinach is one such Indian version.

Ingredients:
• 2 tbsp oil
• 1 tbsp garlic
• 1 tbsp ginger
• ½ cup onion
• 2 tsp chilli powder
• 1 tsp cumin powder
• 1 tsp garam masala powder
• 1 tsp amchur powder
• 1 cup boiled corn
• 2 cups chopped spinach
• 1 cup crumbled paneer
• Salt to taste
• Mint
• Fresh coriander
• 4 slices of brown bread
• 2 tbsp butter
Method:
• Heat oil in a wok and sauté the ginger, garlic and green chillies for a few seconds.
• Add the onions and fry them until translucent and add all the powdered spices into it.
• Add the corn, and chopped spinach and fry until they wilt.
• Add the grated paneer, put salt to taste and stir it nicely to mix everything well.
• Add chopped coriander and mint leaves and give it a good mix again.
• Heat the sandwich maker or pan.
• Apply butter nicely to the two slices of bread and place the paneer mixture on one slice. Cover this with the other buttered slice and place the sandwich on the sandwich maker. Cover and let it grill until done.
• Remove the grilled bread and slice it diagonally using a sharp bread knife.
• Serve immediately with some ketchup, chutney or dip on the side.
