Among the so many popular sweet treats we absolutely love, is phirni. Royal and delectable phirni, is a classic pudding made up of ground rice, milk, sugar, nuts and spices like saffron and cardamom. As per some food legends, this dessert hails from ancient Persia and was invented by the Mughals. It is best served in earthen bowls. 

We know enough about firni or phirni but have you ever heard of Kong Phirin? You may call it phirni in many other parts of the country, but the Kashmiri version of it is here to amaze you. This creamy and light dessert in Kashmir is made not using ground rice but suji or semolina. Kong Phirin is traditionally made in a clay container in order to have a creamy and thick texture. Clay utensils tend to absorb the excess moisture and thus, they make the dessert much thicker and creamier. This dessert is rich and royal as it can get. Isn’t it great? Follow the steps below and try an amazing dessert at home. 

Ingredients 

  • 1 lt milk 
  • 50 gm suji 
  • ½ tsp cardamom powder 
  • Few saffron strands 
  • Sugar to taste 
  • ¼ cup almonds (chopped) 

Method 

  • Start by boiling the milk. When the milk is boiled, lower the sim and add in the suji. Make sure you keep stirring it. 
  • Keep stirring for a few minutes until you see the milk thickening  
  • Thereafter, add cardamom powder and sugar. Mix it well. 
  • Keep stirring and keep an eye on the consistency. 
  • When done, pour the pudding into a clay pot. 
  • Garnish with chopped almonds and serve!
