A wine known as white wine is fermented away from the skin. Straw-yellow, yellow-green, or yellow-gold are possible colour combinations. It is made from the non-coloured pulp of grapes—which can have any colour on their skin—fermenting in alcohol. There have been white wines for 4,000 years or more.

The abundance of types, winemaking techniques, and residual sugar ratios contribute to the broad range of white wines. White wine is mostly made from "white" grapes, such as Chardonnay, Sauvignon Blanc, and Riesling, which have green or yellow hues. If the resultant wort is not tainted, white wine can be produced from grapes with coloured skin. For instance, champagne is frequently made from pinot noir.

The most popular white wine among the many varieties is dry white wine. It comes from the wort's full fermentation and tastes somewhat acidic and fragrant. On the other hand, making sweet wines—fortification or mutation—involves stopping the fermentation process before all of the grape sugars are transformed into alcohol.

Several ways to add sugar to the wort include using noble rot, passing the village, or ripening on the vine. The carbon dioxide from the fermentation process is kept dissolved in sparkling wines, the majority of which are white wines, and turns into gas when the bottle is opened.

White wines are frequently served as a refreshing drink between meals, as an apéritif before a meal, or with dessert. White wines are frequently considered fresher and lighter in flavour than most red wine varieties. Owing to their taste, scent, and capacity to tenderise meat and remove cooking liquids, white wines are frequently employed in culinary arts.
