One of the reasons why chicken wings are fun to eat is because they’re a saucy, messy treat that work perfectly to accompany many glasses of cold beer. Moreover, they are easy to eat, carry and even make a big batch of, when you’re expecting visitors to come over for games night. Making chicken wings are easy because they are already packed with flavour, thanks to the meat being on the bone and don’t take very long to bake or fry. However you may choose to eat your chicken, the experience is incomplete without a lip-smacking sauce to coat the wings, that leave your fingers messy but your tummy happy. Depending on what works for your taste palette, here are three different sauces to bookmark whenever chicken wings are on the agenda.

Carribean Jerk Sauce

A native recipe from Jamaica, this spicy and robust seasoning is usually made as a dry rub in which meat is marinated and grilled. This recipe uses the same ingredients to create a tear-inducing sauce which will leave you salivating for more.

Ingredients

  • 1 dozen chicken wings
  • 5-6 green onions
  • 5 Habanero peppers
  • 2-inch piece ginger
  • 8 cloves garlic
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon allspice powder
  • 1 tablespoon black pepper
  • ¼ cup vegetable oil
  • 2 tablespoons white vinegar
  • Juice of 2 limes
  • Salt to taste

Method

  • Add all the ingredients but the chicken wings to a blender jar and blitz into a smooth sauce-like consistency.
  • Pour over washed and dried chicken wings and marinate overnight or a minimum of 6 hours.
  • Line up the chicken wings on sheet pan with foil paper and bake in a hot oven for 25 minutes. Serve warm.

Mango Chilli Sauce

The sweet and spicy kick from the mango chilli sauce is perfect for those who prefer their chicken wings to be on the less spicy spectrum. Interestingly enough, this sauce is also perfect when spooned over steamed fish or used as a salad dressing.

Ingredients

  • 1 cup diced mango
  • 2 Habanero peppers
  • Juice of 1 lemon
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 2 tablespoons honey
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • Salt and pepper, to taste

Method

  • Add all the ingredients to a bowl and use a hand blender to grind into a smooth paste.
  • Add a bit of oil to thin the sauce, if necessary and brush on top of freshly fried or baked wings and serve some extra on the side.

Harissa Sauce

While this sauce is hot and spicy, it is also packed with tons of umami flavour; perfect to toss crispy fried wings in and enjoy with a side dipping of garlic aioli.

Ingredients

  • ½ cup harissa
  • 2 tablespoons honey
  • 1 tablespoon chicken stock powder
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 1 tablespoon vinegar

Method

  • Melt the butter in a pan and add the harissa paste, garlic powder, chicken stock powder and vinegar and mix well.
  • Remove from heat and add the honey to combine. Add a few spoonfuls to a large salad bowl and the deep-fried wings to toss and coat completely in the sauce. Serve warm with an aioli on the side.
