Millet curd rice is a delectable spin on the classic curd rice dish. The cooked millets are skillfully blended with yoghurt and enhanced with a medley of aromatic spices and herbs. The dish is then elevated with a tantalising tempering, resulting in a truly exquisite flavour profile. Millets are an excellent gluten-free option that boasts a high fibre content, as well as a wealth of minerals and antioxidants. As a result, they make for a much healthier substitute to rice. Ingredients: 

1 cup cooked millets (such as foxtail millet or barnyard millet) 

1 cup plain yogurt (curd) 

1 tbsp oil or ghee 

1 tsp mustard seeds 

1 tsp cumin seeds 

1-2 green chilies, finely chopped 

A few curry leaves 

A pinch of asafoetida (hing) 

Salt to taste 

Chopped coriander leaves for garnish 

Method: Millets should be prepared in accordance with package directions until they are tender and fluffy. Give them plenty of time to cool down. Prepare a pan with oil or ghee and heat it over medium heat. Put in some mustard seeds and watch them pop. Then put in the green chilies, cumin seeds, curry leaves, and asafoetida. Cook for one minute, or until the spices begin to release their fragrance. When the cooked millets have cooled, toss them with the plain yoghurt in a large mixing bowl. To ensure that the yoghurt is equally distributed among the millets, stir thoroughly. The millet and yoghurt should be tempered with the prepared mixture. Sprinkle in some salt, and give the whole thing a good stir. Ten to fifteen minutes of resting time will help the millet curd rice's flavours to meld. Chop some fresh coriander leaves and sprinkle over top. Whether eaten alone or as a side dish with pickles or papad, millet curd rice is a healthy and pleasant option.
