No matter what, my outdoor workout trails are never complete without having a glass or two of fresh sugarcane juice from the roadside stall. The freshly squeezed juice along with the zing of black salt, chaat masala and lemon juice is perfect to rehydrate my body and satisfy my soul and palate. My bond with sugarcane juice has been profound since my very childhood. From having a tall glass of juice on my way back home as a kid to rehydrating myself with it after an intense workout session, sugarcane juice has been my all-time mate. However, relishing it becomes difficult during winters as the cold juice doesn’t seem to satisfy my cravings for something warm and comforting. Hence, in an attempt to satisfy my cravings for something warm and comforting, I came up with the idea to incorporate sugarcane juice into kheer.
Kheer is ubiquitous on most Indian special occasions. From weddings and festivities to times when we crave a warm hug in the form of food, kheer comes to our rescue. And the weird weather of rain and cold has made our cravings escalate to a different level altogether. Moreover, as we are just done with celebrating Lohri, relishing a bowl of ganne ki kheer is a ritual in some Punjabi households. So, to soak up in the festive mood and indulge in a soul-soothing dessert, here’s a ganne ki kheer recipe for you.

To make ganne ki kheer, add a liter of freshly squeezed sugarcane juice to a saucepan and bring it to a boil. Once the juice comes to a boil, add a dash of cardamom powder and washed and soaked kheer rice to it. Cook the rice in the sugarcane juice by stirring it continuously. Once the rice is cooked, add chopped dry fruits, some coconut slices and raisins. Remove it from the flame and relish.
