Any conversation about winter vegetables is never complete without mentioning the popular carrot (gajar). Parathas are one of the most loved breakfast options, especially in North India. Not only are they super easy to make, but can also be stuffed in many different ways. If you are a fan of parathas, it is time you move on from the regular aloo or paneer paratha. Rich in antioxidants, Vitamin A and Vitamin C, gajar makes for a healthy addition to your regular parathas.  

This Gajar Paratha is made using a dough of grated carrots mixed with whole wheat flour and flavoured with cumin seed powder, ginger, green chillies, red chilli powder, and coriander leaves, along with salt to taste. Add water in small portions to knead a soft dough, which is then made into small balls, rolled into parathas, and cooked until they turn crispy on a tawa over medium flame. You can top it with a dollop of butter and serve with curd and pickle.
