The Ganesh Chaturthi festivities have begun with much pomp and grandeur. The eleven-day Indian festival is touted to be one of the biggest in the country. Since the festival is so big in Maharashtra, several B’town celebrities like Shraddha Kapoor, Shilpa Shetty and Riteish Deshmukh also gave us a sneak peek of their celebrations on Instagram. The festival is associated with many delicious foods like modak, ladoos and of course Kheer.

It wouldn’t be wrong to call kheer the festive staple of India. It is prepared in myriad ways. With rice or milk, or sometimes nuts and dates take centerstage. It could be liquid-y or thick, fruity or plain, in other words, your kheer can be anything you want, so why stop experimenting.

This sago-vermicelli kheer by celebrity chef Kunal Kapoor spells festive indulgence, and also proves that not all traditional dishes need to be elaborate, some can charm with their simplicity too.  

This kheer is simple pudding made with semiya, sago, milk, and sugar perfect for the festive season. The quick dessert can be made in 20 minutes. You may have had sago or sabudana kheer or vermicelli kheer separately, this kheer combines the goodness of both.

Ingredients:

  • 70 gm sago
  • 30 gm vermicelli
  • 1 tsp ghee
  • 500 gm milk
  • 50 gm sugar
  • ½ Tsp cardamom powder (optional)

Method:

  • Put the ghee in a pan, roast vermicelli in ghee until golden brown. In another pan, cook in water until they turn translucent and soft. This will take 5-6 minutes.
  • Put milk in a pot, on medium-low flame.
  • Add vermicelli to it and keep stirring. Once cooked through, add the sago or sabudana to the milk. Continue stirring.
  • When the milk starts to thicken and turns creamy, add sugar to it.
  • You can add cardamom powder at this point.
  • Garnish with pistachio and saffron strands.
