We know, this is not the best time to count calories. Diabetes is a condition characterised by raised or dropped blood sugar levels in the body. If nothing is done to control diabetes it can take a toll on your other organs such as liver, kidneys and eyes. Unfortunately, there is no cure for diabetes, but you can manage it to a great extent by following a diet enriched with fibre, protein, and antioxidants. So all the holiday treats made with maida are out of question, since it is ‘refined’ flour, what you need are whole grain flours.

This Christmas, ditch cookies made with maida and try this Spiced Peanut Butter Almond Cookies by Sujata Sharma, BeatO Certified Diabetes Educator and Senior Nutritionist. Cookies are an intrinsic part of Christmas celebrations, traditionally, it is one of the two things you keep out for Santa Claus himself. This year, be your own Santa and gift yourself these cookies.  

Ingredients:

  • 120 gm unsweetened smooth peanut butter
  • 145 gm whole meal almond flour
  • 2 gm nutmeg powder
  • 10 gm sweetener
  • 2 gm cinnamon powder

Method

  • Mix all the ingredients together to knead a smooth cookie dough.
  • Refrigerate the cookie dough for 15 minutes
  • Preheat the oven at 375 F or 190C
  • Line a baking sheet with parchment paper and scoop out 15g of dough on the parchment paper (1 inch apart).
  • Bake for 6 minutes and after that, flatten the cookies with a fork.
  • Bake for another 5-6 minutes till the cookie base is golden brown.
  • Let the cookies rest for 5 minutes before eating.
