A morning coffee tends to be the go-to for people across the world but as we’re becoming more and more conscious about health and the effects of caffeine, many are on the lookout for a replacement for their usual morning beverage. If tea or juice just isn’t your thing, or if you’re looking for a drink that adds a dose of health to your day, you could be an ideal candidate for a Beetroot Latte.

Now despite the name, there’s no coffee involved in the making of a Beetroot Latte. It’s simply a creamy, frothy beverage most often made with plant-based milk to a drink that’s delicious, healthy and vegan and can be served hot or cold.

Rather than fresh beetroot, most recipes call for Beetroot Powder, made from freeze-dried concentrated beetroot juice. This plant powder has extremely high levels of dietary nitrates, even more than fresh beetroot. Nitrates are important for the body because they get converted into nitric oxide, which is a molecule that dilates blood vessels to increase blood flow. As such, consuming beetroot powder can help improve blood circulation, stamina, energy and muscle recovery. It’s these properties which have made Beetroot Lattes a very popular pre-workout drink.

While this drink on its own is sure to charge you up in its own way every morning, you can add a shot of espresso to the mug before making the latte if you have an ‘I’ll never survive this day without coffee’ kind of week. Don’t worry, we know that feeling. So if you’re ready to add a dose of health to your breakfast routine, order some beet powder and supercharge your day.

Ingredients:

  • 2 tablespoons Beet Powder
  • 1 tablespoon Warm Water
  • 3 teaspoon Maple Syrup - or 1-2 drops of stevia drops
  • ½ teaspoon Vanilla Extract
  • 120 ml Unsweetened Light Coconut Milk
  • 175 ml Almond Milk

Method:

  • In a small saucepan, add beet powder along with warm water, maple syrup, and vanilla extract.
  • Whisk to combine and dissolve the beet mixture.
  • Add in coconut milk and 1/4 cup of almond milk to the saucepan.
  • Bring the pan over medium heat, and warm the beet milk, often stirring until hot – it takes about 2-3 minutes.
  • Pour the hot beetroot milk into a tall coffee mug and set it aside while frothing milk.
  • Now, froth the remaining 1/2 cup of unsweetened almond milk in a milk frother or a coffee mug, using a hand milk frother (not all brands froth well. See notes for my recommendations).
  • Top the coffee mug with the frothed almond milk and serve.
  • Taste and adjust sweetness to your taste
