The Baked Feta trend may be behind us but that’s no reason to stop enjoying this delicious and wholesome dish. With the salty creamy feta, perfectly roasted veggies and a drizzle of sweet honey, it’s a well-balanced dish that’s protein-rich but still light on the stomach. So if you’re looking for a lunch recipe that will be healthy but substantial, this is sure to hit the spot. 

If you’re someone who needs a dose of midday carbs, this could also be served over rice, couscous or mashed potatoes for an even more filling meal. Vegetables can also be added as and when you feel like it to amp up the flavours and change the profile of the dish.

Ingredients

  • 1 head broccoli
  • 2 cups cherry tomatoes 
  • 200 gm canned chickpeas
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon dried oregano
  • ¼ teaspoon red pepper flakes
  • 4 tbsp honey
  • 250gm block feta cheese 

Vinaigrette:

  • ¼ cup extra virgin olive oil
  • 2 tablespoon lemon juice
  • 2 tablespoons freshly chopped basil
  • 1 tablespoon capers - with their juice
  • 1 clove garlic - minced

Method

  • Preheat the oven to 180 degrees C and line a large baking sheet with parchment paper.
  • Trim and chop the broccoli, halve the tomatoes and add the chickpeas to the tray.
  • Drizzle with olive oil and toss with oregano and pepper flakes.
  • Cut the feta into wide strips and lay them between the other ingredients.
  • Finish with a drizzle of honey and bake for 15-20 minutes. 
  • Meanwhile, whisk all the ingredients for the dressing together and pour over the salad when serving.
