Ingredients
1. Amla 1 cup
2. Jaggery 1 cup
3. Oil 2 tsp
4. Panch Phoron 1 tsp
5. Dry Red Chilli 2 nos
6. Red chilli 2
7. Black Salt to taste
8. Cumin Powder 2 tsp
Method
1. First, cook the amla in water until it becomes delicate and mushy. De-seeded and chopped finely after that. Once the oil in the pan is heated enough, add the red chillies and panch phoron.
2. Add the chopped amla, black salt, and white salt when the spices have started to crackle, and simmer for a further 5-7 minutes. Add the jaggery and combine well.
3. Cook for five minutes on low heat, allowing the jaggery to melt and thoroughly combine everything. Once you've reached the appropriate consistency, add the cumin powder and stir continually.
4. Amla-Gur Chutney that you made from scratch is now ready. Serve it with rice, paratha, or even chilla. Enjoy! If properly stored in an airtight jar, this chutney can last for 7–10 days.
