There are so many dishes that we absolutely, but this piece is dedicated to a special dish from North India. Can you guess?

In this article, we are going to talk about Aloo wadiyan. This is a much-loved potato and urad dal dumpling dish that makes up for a perfect winter dish. Wadiyan is sun-dried spicy urad dal dumplings that do an explosion of flavours in every single bite. For this, the urad is soaked, grind, and kept overnight to ferment. Then, some whole spices like coriander seeds, fennel seeds, black pepper, red chili, and one special ingredient i.e., white petha added to the dal dough. Small portions of this dough are dropped on a cotton cloth and sun-dried. Once these balls are dried, they could be used in making delicious dishes and could be kept for a longer time.

Wadiyan and aloo go hand in hand. Hands down, aloo wadiyan is the most popular dish not only in the North but across the country. Winters are almost here, and it is time to relish this dish. Here’s my mom’s recipe of aloo wadiyan that will make you drool over it.

Ingredients

  • 2 tbsp oil
  • 3-4 urad dal wadiyan
  • 8 potatoes
  • 1 onion
  • 2 tomatoes
  • 10 garlic cloves
  • 4 green chilies
  • Handful of coriander
  • 1 tsp red chili powder
  • 2 tsp coriander powder
  • Salt to taste

Method

  • Take a pressure cooker and heat oil in it.
  • Break urad dal wadi and add it to the cooker.
  • Let it cook for 2 to 3 minutes.
  • When done, take it out and keep it aside.
  • Meanwhile, grate onions and tomatoes.
  • Also, crush the garlic.
  • Take a pan and add oil to it.
  • Add grated tomatoes and onions.
  • Cook it until the oil separates.
  • Add crushed garlic and sauté well.
  • Add all the powdered spices and cook it for a minute.
  • Then add cubed potatoes, green chilies as well as the wadi.
  • Let it cook for 3 to 4 minutes.
  • Pressure cook the dish.
  • Garnish it with coriander leaves.
  • Serve and enjoy!!
