Almost every bustling street in India has that one take-out van which sells the hottest Chinese food, except the method, style and some of the ingredients used, may remind you of your own kitchen. Why look at the streets? Haven’t you given your own spin to noodles, momos and Manchurian while making it at home? Added some jeera and garam masala to your fried rice to satisfy the inner chef in you?

Almonds add a lovely crunch to this vegetarian recipe, moreover they are roasted before they are tossed in the rice which lends to added flavour. Almonds are also packed with many health benefits, no without further a do. Here's the recipe you have been waiting for. 

Almond Rice Recipe By Chef Manish Mehrotra  

Ingredients:

  • Half cup almonds (whole)
  • 1 cup boiled basmati rice  
  • 2 tbsp onions (chopped)
  • 1 tbsp red bell pepper (chopped)
  • 1 tbsp green capsicum (chopped)
  • ½ tsp crushed black pepper
  • Salt to taste
  • 1 tbsp butter
  • ½ tsp cumin seeds

Method:  

1.Take the almonds and roast them in preheated oven at 180 degree Celsius for 4 minutes. Once done, cut them into slivers. Make sure they have cooled down before you do that.  

2. Next, take a pan and heat desi ghee. Throw in the cumin seeds and let them crackle.

3. Add chopped red bell pepper, capsicum, onions, pav bhaji masala and sautee for 10 seconds.

4. Then add cooked rice and toss everything together. Adjust seasoning accordingly.

5. Finally, finish off with butter, freshly chopped coriander leaves and lime juice. Garnish with roasted almond slivers.  

6. Serve hot and indulge away.
