Loaded with vegetables, Manchow Soup is a comforting and flavourful soup which is easy to prepare. It is a vegan soup which is prepared without onion and garlic. It provides warmth and comfort on cold evenings and having this soup is a great way to have many veggies in one bowl.
It is an Indo-Chinese recipe, which is very popular in India. This delicious soup is served in many restaurants all over the world. Many people prefer to have it as dinner along with garlic bread. Here’s how to prepare this delightful soup at home.

Ingredients:
- 1 tsp Oil
- 1 tsp Ginger finely chopped
- 1 Green Chili finely chopped
- ¼ cup Finely Chopped Celery
- 4-6 French Beans finely chopped
- 1 Carrot peeled and finely chopped
- ¼ cup finely chopped Cabbage
- ¼ cup finely chopped Green Pepper
- ⅓ cup finely chopped Mushrooms
- Salt to taste
- ¼ tsp Black Pepper Powder or to taste
- 1 tsp Soya Sauce
- 1 tsp Ketchup or 1 tsp sugar
- 2 tsp finely chopped Coriander Leaves
- 4 cups of Water
- 2½ tsp Cornstarch + 2 tsp Water
- 1 tsp Lemon Juice
- For Fried Noodles
- ½ cup cooked Noodles
- 2 tsp Cornstarch
- Oil for frying
Method:
- Take a bowl, and add cornstarch and water. Mix them to prepare a smooth batter. Once done, keep it aside for a while
- Now. Heat oil in a pan on a low flame. Add ginger, green chilli and celery to it and saute them for a minute
- Next, put chopped french beans, carrots, cabbage, green pepper, and mushrooms. Mix properly and saute on a medium to high flame for approximately 2-3 minutes. Stir the vegetables continuously and switch off the flame once the vegetables get cooked
- Once vegetables are stir-fried properly, add water, salt, black pepper, soya sauce, ketchup and chopped coriander leaves. Now mix them properly
- Bring the mixture to a boil, stirring the ingredients once in a bit and let it simmer on a medium flame for approximately 2-3 minutes
- Next, put in the cornstarch mixture and combine immediately. Stir properly and keep cooking until the soup thickens
- Now add lime juice and stir again. Once done, taste the soup and adjust the seasonings as per your taste and turn off the flame
- Now let’s cook frying noodles. Add cornstarch to cooked noodles and mix well. Once done, heat oil in a pan on a low flame and put the noodles for frying
- Fry these noodles until they get crispy. Then drain them on a kitchen cloth or towels
- Now garnish the soup with coriander leaves before serving
- Finally, serve delicious and hot Veg Manchow Soup topped with fried noodles
Important Points To Remember:
- You can also keep the vegetables crunchy by stirring them for a minute only
- Add soya sauce if you want to give the soup a darker colour
- Do not add too much corn starch. The soup tastes good with semi-thickness.
- After adding corn starch, stir the soup immediately to avoid any lumps
- If you want your soup spicier than put more green chilis to it
