Eggs are quite a versatile ingredient that can take away all your worries. Eggs are something that could be the handiest food to be around. Any dish of egg could get ready in no time, you just name it. One can have eggs at any time of the day. Eggs are not just delicious but healthy too. For example, you can have bread omellete for breakfast, egg curry for lunch, and Nargisi kofta for dinner. Your life is just sorted. 

Yesterday, I was feeling very hungry and was not able to decide what to cook. I was scrolling through Instagram and saw chef Nehal Karkera’s post. Chef Nehal had cooked some delicious gunpowder eggs that left me drooling. In no time, I grabbed eggs from the fridge and tried cooking the same dish. It turned out to be soo delicious and I am now a complete fan of this egg dish. I know you too want the recipe. So, here it is. Follow the steps below and have this delicious dish down your throat.

Ingredients

For the gunpowder

  • 2 tsp coconut oil
  • 3 Kashmiri chilies
  • 15-20 curry leaves
  • 2 1/2 tsp urad dal
  • 2 1/2 tbsp chana dal
  • 2 tbsp sesame seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp hing
  • 1 tsp chilli powder
  • 1 tsp salt or as required
  • Other ingredients
  • 2 tbsp ghee
  • 2-3 tsp gunpowder
  • 4-5 steamed eggs
  • Fried curry leaves for garnish

Method

  • Heat coconut oil in a pan and fry the Kashmiri chilies and curry leaves for 15-20 seconds
  • Remove from the pan once crisp and in the same pan fry the urad dal, channa dal & seeds till they start to brown.
  • Fry on medium heat string constantly.
  • Once they turn golden remove them, transfer them to a mixer grinder, and grind them to a coarse powder
  • Next, steam or boil the eggs, if steaming steam for 5 mins.
  • Now heat ghee in a pan add the gunpowder and add the eggs
  • Toss well and serve garnished with crispy curry leaves.
